What makes this ok is that "essay" isn't a set unit of measure.
Different standards and types of writing.
My finals have a minimum of 5 paragraphs. Normally, anywhere up to 5 paragraphs is fine.
University will be a whole new world. Assuming that's what you're doing. Otherwise don't worry about essays!

Exams do not test knowledge or intelligence. They test test taking. Which I’m good at... so I’m cool with it while I hate it.

Why..? Timed writes arguably test more than an actual test.
The ability to write concisely, convincingly & quickly is a skill much like learning fractions. Practice will make you better.
You can typically write a full page essay in an hour on a topic. A report usually is a multi-page effort that requires research & more time.
I wrote every Con Law essay in a couple hours the night it was due. Guess I work best under pressure because I somehow passed the class.

Well as a History Graduate I don't think it works as well vs if I was a Literature major.

I was great at taking tests because I can memorize info and the brain-dump it on the test. Problem is, as soon as I write it down it’s gone.

It's like showing your work in math vs just writing an answer. Normal tests require an answer, timed writes require you to show you know it.
Here, normal tests requires more than just an answer.

Dunno, every test I've taken is multiple choice or something silly. So to me, timed writes were always fun.
Just knocked out 7 pages in 2 hours. Can't do essays without it being last minute.
My uni had strict rules for papers that specified required line spacing, font, font size etc. So, 1 page essay is a constant measure.

With practice, you CAN write an essay on a familiar topic very quickly. The exam tests your ability *after* you've had time to practice.

Depends on the institute. Some will only give you a broad area instead of the specific question, which isn't always helpful.
